Ahhh potato skins... I have memories as a child of my family going out to eat on the weekend and this most DEF would be an appetizer we’d all share! :) And while extremely delicious, this snack tends to pack on the grease and calories with it… but not to worry!! Here’s another way your family can enjoy this classic favorite and best part is, it's even healthy enough to make into a meal!!
Sweet Potato Skins!
4 baked medium sweet potatoes (cut in half)
1 tsp. EVOO
½ tsp. sea salt (or Himalayan salt)
4 oz shredded cooked chicken breast
1 tsp. all-natural taco seasoning (no salt added)
1 cup steamed spinach
8 Tbsp. low-fat plain Greek yogurt
¼ cup chopped fresh cilantro
1. Heat oven to 400°
2. Scoop out the sweet potatoes (& OMG you better save and DEF use for Sweet Potato Mash).
3. Place skins on a baking sheet, brush lightly with EVOO and sprinkle on a lil sea salt and crushed black pepper. Bake for about 10 mins (or until crisp)!
4. While the skins are baking, combine some shredded cooked chicken breast and low sodium (or homemade) taco seasoning in a bowl.|
5. When skins are done top each with some spinach, the chicken mixture, and a little plain Greek yogurt! Garnish with cilantro!!
